Working from memory, I tried to recreate the taste of a British Pale Ale that deeply impressed me when I first drank it in a London pub in the late 80s.

This isn't just nostalgia; it's a new beer to be enjoyed with a futuristic sensibility. We used more English hops than a traditional ale to further emphasize their characteristic floral aroma and earthy profile.

By using authentic British malts, we've created flavors of toasted bread, caramel, and dried fruit. We also added wheat from Kagawa Prefecture, which has successfully brought out a rich, savory umami.

The keyword is: "Scoop up the setting sun and drink it down." This is the birth of an original pale ale, one that is truly "new-yet-old."
